
今天我和几位朋友有幸参观了坐落在芙蓉的森美兰海南会馆,借此机会想做一期海南文化的话题。慢慢地,从年轻人的口中再也无法听见这朗朗上口的语言,再过不久海南文化可能就要失传了。趁现在有机会,我们几位年轻一辈来向他们学习,帮助海南会馆推广这极为重要的海南文化。
Today, we are pleasure to visit to Hainan Association located in Seremban, Negeri Sembilan. Upon the visit, we realize the culture is diminishing for the group of younger generation, as this goes on, the culture will be lost one day. Therefore, as we plan to kick start a topic on Hainan Culture, to learn from the seniors in order to promote the culture to everyone else.
说到海南,海南是中国最南边以级最小的一个县。它四周环绕着海,可是他拥有多达200 个岛屿。在这个小地方里却诞生出了丰富的文化特产,这也影响了并丰富了一代又一代的人。
Hainan is the smallest province in the southern part of China. It is surrounded by water that consists of 200 island. In this place generates interesting cultures and that has affected throughout different generations.
海南文化源自于中国,其中传承至我国的海南文化已散布至全国各地。其中,海南人就占了马六甲总人口的百分之二十四。这些海南人刚踏入马来亚这一片净土是所承办的就是餐饮业,开了咖啡馆,也就是kopi tiam 供友人享用。常年的累积使得海南人在美食特色上别具一格。
Hainan Culture was came from China, but now it is dispersed all over Malaysia. Especially, Hainan people stood up 24% of population in Melaka at that time. When they came into Malaysia, they opened a lot of coffee shop, which is also known as Kopi Tiam, and this culture became part of specialties in Malaysia.
我们可能没有听过海南有什么特别美食,但是一定都会有看过或者品尝过,只不过这些已经融入我们的生活中,成为我们日常的一部分。
You may not heard of much Hainan delicacies, but I believe you may have seen or tried once. The delicacies has become part of us in our daily lives.
四大海南菜品
The Four Hainan Delicacies

海南鸡饭,是家喻户晓的家常菜,不仅很常见到,且美味可口。它的前身采自于中国文昌鸡,是当时秦朝四大菜品之一。现在,海南鸡饭是搭配了特制的油饭和青瓜一起食用,即顺口还解腻。海南鸡饭之所以美味,因为酱汁是由蒜米和姜,经过翻炒后搭配盐,加点葱和香菜更激发出酱汁的鲜味。除此之外,他的鸡皮更是透亮,肥而不腻,看到了都会忍不住流口水。
Hainan Chicken Rice is a well-known delicacies, Malaysian normally had it for lunch and it is very delicious. It was also known as Wen Chang Chicken, from China which it is famous for one of the great 4 delicacies in Qing Dynasty. Now it is served with special made oil rice with fresh cucumber. It is tasty because of the curvy, which is made of frying minced ginger and garlic with the match of soy sauce and salt, with the combination of coriander that boost up the fragrance of the food. Other than that the chicken skin is bright and transparent in color that stimulates the appetite.

山东羊,曾被列为贡品的一道菜。海南人无论在娶嫁寿丧,过年过节都让羊成为他们宴会的主角,无羊不成宴就是因此而来。它的味道是由稀有草木所致,由于生长在东山岭,吃了当地盛产的鹧鸪茶的叶子,而使得肉质鲜嫩及没有膻味。而这些鹧鸪茶的叶煮成的茶味道香醇浓厚,成为了海南名茶。山东羊的煮法千变万化,有红焖,清汤,椰汁,干煸,火锅等,味道各有千秋,别具一格。
Shan Dong lamb was known for its tribute to the emperor. Hainan people always includes lamb in the meal in every ceremonies and festive seasons they had. The rare vegetation made up the taste, the leaf can be made into Mallotus Peltatus, a Hainan tea that is full of aroma and thick in taste. After lamb consume the taste, the mutton become chewy and less stinky smell. Shan Dong lamb can be served with many methods and each of them are also very unique.

和乐蟹是生长在万宁小海的一种青蟹,由于当地的小伙都善于捕蟹,和乐蟹因此得名。和乐蟹不需要太多花里胡哨的煮法,即使当地的海南海鲜馆只需要清蒸,加上独制的蘸料,便可与清蒸大闸蟹相媲美。他浓浓犹如咸蛋黄的蟹膏,膏脂有丰厚的肉感,吃上一口蟹肉,唇齿留香。
HeLe Crab is grown in WanNing sea, it is famous because teenagers at the area do know how to catch one. The crab is best served with steamed, added come special sauce will enhance and drive out the favour from the dish. The yellow part of the crab meat looks like salted egg yolk, you can taste it with a very bouncy texture, and after consume it the fragrance will kept in the mouth for some period of time.

嘉积鸭也俗称“番鸭”,其美味就要重他的饲养的方法开始说起。在它们小的时候喂食淡水小鱼虾和蚯蚓,在它们的羽毛初长的时候,缩小其活动范围,并用米饭、米糖捏成小团块喂食。活动量小的鸭子骨头不会长硬,且运动量小能增快变肥的速度。二三十天后达到外观肥胖即可将其端上餐桌。它的营养价值还极高,不仅蛋白质含量高,脂肪含量偏低,吃起来肉质肥厚,皮白滑脆,烹饪方法以白切最能体现他的原质原味。
Jiaji duck is special for its method of rearing. It is feed with shrimps and worms at its young age. Later on when the feather started to come out, the farmers will trap them in a small area and to feed them with rice cubes with sugar cubes. They limit their actions to make the bones soft, less movement can also lead to growing faster. After 20 to 30 days when they are fat enough, they can be served. The duck have high nutrition level, high protein content and low fat, therefore the meat becomes chewy and the taste is original.

最后来介绍比较出名海南咖啡,他是在马来西亚大家都家喻户晓饮品。它拥有很强的特色那就是香气扑鼻,在烘焙的过程中加入白糖,牛油,玉米,芝麻等原材料一起炒,使得它的香气四溢,口感也比较浓厚。它的来源更能追溯至十九世纪, 当时中国当地的海南人因为生活艰苦,纷纷下南洋到马来亚谋生。尝试并接触了咖啡之后,大伙将这一种文化带回了故乡,咖啡树也慢慢地出现在海南这片土地上。当然,归功于海南岛自身的气温适中,降雨量丰富,非常适合种植咖啡豆。海南慢慢地成为了咖啡的主要种植区,海南咖啡也开始闻名。
Last but not least, the Hainan Coffee is famous drink in Malaysia. It has a very strong aroma, and strong texture, which is fond by citizens of the country. The coffee beans is cooked with sugar, butter, corn and sesames that makes how special it is. Its origin can be trace back to 19th century, when Hainanese from China struggle with their living, and they migrate towards south to Malaya. After managed to enjoy some coffee, they brought back the coffee culture to their hometown. The weather in Hainan is warm, with enough rain falls that is suitable for the crops to grow. Slowly, Hainan become capable in producing their own coffee, and Hainan coffee started become famous.
目前的我只吃过海南鸡饭和喝过海南咖啡,对其他的美食也只能是垂涎三尺。有望找到这些美食的餐馆再跟大家一一介绍。
By far, I had only tried Hainan Chicken Rice and Hainan Coffee before, both of them taste really good and I do longing to taste other 3 of them. If I get to tried them in any of the restaurant, I will definitely introduce them to you.
